This comes from WSU Extension Office. Variations: Try whole wheat tortillas or adding other veggies. Add some leftover cooked chicken. Tastes great with salsa and sour cream. Ingredients:
4 cups spinach leaves |
1 1/2 cups shredded cheese |
1 cup chopped onion |
3/4 cup shredded carrot |
10 flour tortillas (1 pkg) |
Directions:
1. Rinse spinach well; set aside. 2. Shred cheese, carrots and chop onion. 3. On one tortilla, place a small amount of each item on one side and fold. Warm in pan on medium heat until browned or microwave each one for 25 seconds or until cheese is melted. 4. Repeat for each tortilla. |
