This dish can be used for brunches, side dish or even a main with a side salad. Ingredients:
1 large bag of fresh baby spinach |
3/4 lb. grated mozzarella cheese |
5-6 slices of american cheese (deli, not processed) |
1/2 cup of salami or pepperoni cut into small cubes |
1/4 tsp. onion powder |
1/4 tsp. garlic powder |
2 tbsp. extra virgin oil |
deep dish frozen pie crusts for top & bottom |
Directions:
1. Preheat oven to 350 degrees. 2. poke holes in bottom pie crust with fork and bake for 5-7 min. 3. Meanwhile in a large mixing bowl, combine ALL ingredients (use your hands, it's much easier). 4. Remove pie crust from oven and cool slightly. 5. Drop mixture into bottom pie shell and push down trying to get most if not all into pie shell, it will be piled high but will shrink down and sink during the cooking process. 6. Drape top pie shell over the top and pinch to bottom shell - poke fork holes on top for venting (about 2-3 pokes) 7. Bake for approx. 30 minutes or until dark golden brown, serve hot, warm or cold. |
