This easy and hearty main dish pie combines frozen chopped spinach with different types of cheese and onion for a vegetarian entree. Ingredients:
1 cups low fat cottage cheese |
1 cup mozzarella cheese |
1/4 cup parmesan cheese |
4 eggs |
10 ounce of frozen spinach, thawed |
1 cup zucchini, chopped |
1/2 cup onion, chopped |
1 cup feta cheese |
1 cloves of garlic, minced |
1 frozen pie crust 9 |
Directions:
1. Preheat oven to 400 degrees. 2. Drain spinach very well in colander, using paper towels to soak up excess moisture. 3. Cook onion, zucchini and garlic in a heavy skillet until tender, about 4 minutes. 4. Beat the eggs in a large bowl. Add spinach, cheeses, onion, zucchini and garlic. 5. Bake for 35-40 minutes or until knife inserted in center comes out clean. Let cool 5 minutes before slicing. |
