Crustless spinach pie that fits into a healthy clean lifestyle. Serve hot or cold. Eat for breakfest, lunch or dinner. Ingredients:
1 (10 ounce) package frozen chopped spinach, squeezed dry |
1 diced onion |
2 minced garlic cloves |
2 slices canadian bacon |
1 tablespoon olive oil |
1 cup fat-free cottage cheese |
2/3 cup reduced-fat feta cheese |
2 large eggs |
1/2 cup egg white |
Directions:
1. Heat oven to 350 ( I use my toaster/pizza oven). 2. Lightly cook onions with garlic EVOO. Cook Canadian bacon and chop to same size as onions. Mix all ingredients together in a large bowl. Spray a pie pan with cooking spray and add contents of bowl. 3. Bake for 40 to 45 minutes. |
