This is an easy recipe for spanikopita without the filo dough. Ingredients:
2 pounds spinach, rinsed and chopped |
8 ounces feta cheese, crumbled |
1 (8 ounce) container cottage cheese |
1/2 cup chopped onion |
3/4 teaspoon poultry seasoning |
2 teaspoons chopped fresh dill |
1/4 teaspoon ground black pepper |
salt to taste |
2 cups bread crumbs |
4 tablespoons butter, melted |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch casserole dish. 2. In a large bowl, combine the spinach, feta cheese, cottage cheese, onion, poultry seasoning, dill, pepper and salt. Mix well and pour into prepared dish. 3. Mix together the breadcrumbs and butter. Sprinkle over spinach mixture and bake at 350 degrees F (175 degrees C) for 30 minutes. |
