Spinach Pesto-Stuffed Mushrooms |

Ingredients:
1 large garlic clove |
1/2c coarsely chopped fresh basil |
1/3c unseasoned bread crumbs |
1/4c fresh grated parm cheese |
2c coarsely chopped fresh spinach |
34 medium mushrooms (stemed removed) |
5t evoo, divided |
Directions:
1. Heat oven to 400. W/motor running, drop garlic into food processor; process until chopped. Add spinach and basil, pulse until finely chopped. Add bread crumbs & cheese, pulse to combine. W/motor running, add 3T of EVOO, process until a paste forms. 2. Brush mushroom caps w/2T of EVOO, place on baking sheet. Fill each cap w/filling. Bake 15-20 mins or until tender. |
