Another one for red pepper lovers Ingredients:
1 deep dish pie shell |
1/4 cup pickled sweet red peppers, sliced |
1 tablespoon olive oil |
4 cups fresh spinach, stemmed |
4 eggs |
1 cup heavy cream |
4 ounces feta cheese, crumbled |
Directions:
1. Preheat oven to 350 degrees. 2. Saute peppers in olive oil until slightly softened. 3. Add spinach and saute until wilted. 4. Mix eggs and heavy cream. 5. Place feta cheese in pie shell. 6. Add spinach mixture and the egg mixture. 7. Bake for about 20 minutes or until set. |
