Spinach Onion Tom Eggwhite Breakfast Dish

Ingredients:
2 egg whites
1 c spinach
1/3 tomato, diced
1/3 onion, sliced
1 clove garlic, minced
2 tbl mozzarella cheese, shredded
1/8 tsp cayenne pepper
1 pinch salt
1 tsp olive oil
Directions:
1. Fry onion and garlic in oil.
2. Add spinach and stir until wilted.
3. Add diced tomato and cook until most of juice is gone.
4. Add cayenne pepper and salt and stir.
5. Pour egg whites on veggies and top with cheese.
6. Cover and turn to low.
7. Cook until egg is set.
