This is a great mix of flavors! Ingredients:
1 lb fresh spinach |
1/4 lb fresh mushrooms, sliced |
3 hard-boiled eggs, chopped |
1 bunch green onion, chopped |
1/2 cup olive oil |
5 tablespoons wine vinegar |
1/3 cup sugar |
1/4 teaspoon dry mustard |
1/8 teaspoon pepper |
8 slices bacon, cooked and crumbled |
1/2 cup blue cheese, crumbled |
Directions:
1. remove stems from spinach, wash leaves thoroughly and pat dry. 2. Combine spinach, mushrooms, eggs, and green onions in large bowl. 3. combine oil, vinegar, sugar, and seasonings in a jar or salad dressing mixer. Shake vigorously. 4. Top salad with dressing just before serving and toss gently. 5. Garnish with bacon and bleu cheese. |
