Spinach & Mushroom Quiche |

Really, you could add anything you wanted to this breakfast quiche. I find it's a great way to get my daughter to eat protein and veggies all at once! Ingredients:
6 eggs |
16oz muenster cheese (shredded) |
1 - 10oz package thawed chopped spinach |
8oz chopped mushrooms |
salt & pepper to taste |
optional: ham, sausage, or bacon. yum |
Directions:
1. Sautee the mushrooms and spinach until all the water is cooked out / evaporated. Cool them completely. (I usually put them on a plate in the freezer for a few minutes to cool them quicker.) 2. In a mixing bowl, add the eggs and cheese. Once the veggies are cooled off, add them. Mix well. 3. Add salt & pepper to taste. 4. Grease a pan (I use a pie pan) and pour the mixture in. 5. Bake at 350F until done. (In my oven it takes about an hour+/-.) |
