Spinach, Mushroom & Lemon Pilaf |

From New Zealand Taste magazine. Ingredients:
2 onions, finely sliced |
2 garlic cloves, crushed |
50 g butter |
150 g button mushrooms, sliced |
1 cinnamon stick |
4 whole cloves |
4 cardamom pods, bruised |
250 g basmati rice |
1/2 zest and lemon, juice of |
450 ml vegetable stock |
200 g spinach, washed and roughly chopped |
Directions:
1. Cook the onions and garlic in the butter in a large shallow pan until soft and golden. 2. Add the button mushrooms and cook until soft. 3. Add the spices and cook for 2 minutes, then stir in the rice, lemon zest and stock. Cover. Cook on a gentle heat for about 15 minutes until the liquid has been absorbed. 4. Stir through the spinach and lemon juice, cover for 2 minutes until wilted and serve. |
