Spinach, Mushroom and Goat's Cheese Lunch |

a mix of leaves, cheese and mushrooms, ideal for a quick hot lunch. Ingredients:
1 corn tortilla |
1 large mushroom, chopped |
1 oz spinach |
1 oz cashews |
1 oz goat's cheese |
1/2 oz butter |
Directions:
1. Warm the tortilla as per packet instructions. 2. Meanwhile, dry roast the cashew nuts in a small pan and set aside. 3. Melt the butter and fry the mushrooms in the same pan. 4. Once the mushrooms are browned, add the spinach and cook quickly till it is wilted. 5. Put the cooked filling in one half of the warmed tortilla and add nuts and cheese. 6. Fold over. 7. Eat but use a plate as mushroom juice will run out! |
