Delicious at breakfast or little ones for snacks, but you have to like spinach! Ingredients:
1 -1/2 cups all purpose flour |
2 tsp baking powder |
1/2 tsp salt |
pinch cayenne pepper |
1 cup cooked spinach (remove as much moisture as possible) |
1/2 cup bacon - chopped |
1 cup grated cheddar cheese |
1/2 cup milk |
1/4 cup vegetable oil |
1 egg |
Directions:
1. Preheat oven to 375F 2. Sift dry ingredients together. Add spinach, raw bacon, and cheese and mix slightly 3. Beat milk, oil & egg together and stir into dry ingredients. Mix until flour is moistened. Batter should be lumpy. Two thirds fill greased muffin tins. 4. Bake for 15-20 minutes. 5. Serve with butter |
