Ingredients:
1 envelope unflavored gelatin |
1/4 cup cold water |
1 (10-ounce) package frozen chopped spinach |
1/2 cup mayonnaise |
1 tablespoon prepared horseradish |
2 teaspoons minced onion |
2 teaspoons lemon juice |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/8 teaspoon hot sauce |
1/2 cup commercial sour cream |
assorted crackers |
Directions:
1. Soften gelatin in water in top of a double boiler 5 minutes; cook over simmering water, stirring until gelatin dissolves. 2. Cook spinach according to package directions, omitting salt; drain well. 3. Combine dissolved gelatin, spinach, mayonnaise, horseradish, onion, lemon juice, salt, pepper, and hot sauce in container of an electric blender; process until smooth. 4. Spoon mixture into a lightly oiled 1 1/2-cup mold or bowl. Chill overnight. Unmold onto a serving platter. Spread sour cream over mold. Serve with crackers. |
