This is a copycat from Hometown Buffet. Ingredients:
1 (10 ounce) package frozen chopped spinach, thawed and drained |
4 eggs, beaten |
1/4 teaspoon salt |
1/8 teaspoon pepper |
2 3/4 cups heavy cream |
2 cups shredded cheddar cheese |
1 cup fine dry breadcrumb |
paprika |
2 tablespoons butter |
Directions:
1. Preheat oven to 375 degrees F. 2. Butter well a 9-inch glass pie plate or a 9-inch square dish. 3. Beat the eggs well and beat in the salt, pepper and cream. 4. Stir in the spinach and cheese. 5. Pour into dish. 6. Top with 1/4 to 1 cup of the crumbs and sprinkle generously with paprika. 7. Dot the top with 2 tablespoons butter. 8. Bake for 35 to 50 minutes (start checking at 35 minutes). 9. Don't over-bake. |
