Spinach Maria as presented on local news program by Olivia Sipes, owner of local restaurant MIss Olivia's Table. I've had this, and it's wonderful!! Can use monterrey jack in place of pepper jack. Your choice of toppings, all are great! Read more !! Ingredients:
2 (10 oz.) packages frozen spinach, thawed and lightly drained (i use one 16 oz. bag of frozen chopped spinach) |
1 (10.25 oz.) can of cream of mushroom soup |
1 medium onion, chopped |
1 cup mayonnaise |
4 oz. pepper jack cheese, grated |
1 cup cheddar cheese, grated |
toppings - your choice |
french's fried onion rings |
shoestring potatoes |
slivered almonds |
buttered bread crumbs |
Directions:
1. Generously butter a 2-quart baking dish. 2. Preheat oven to 350 degrees. 3. Combine spinach and all the remaining ingredients. 4. Pour mixture into the prepared baking dish. 5. Bake 35 minutes. 6. Top as desired and bake an additional 8 to 10 minutes or until the topping begins to brown. 7. Cook's note: I add the cheddar cheese to the mixture and scatter the pepper jack on top |
