This is a River Road Recipe....This dish is also very popular in Louisiana... Enjoy Ingredients:
2 packages frozen chopped spinach |
4 tablespoons butter |
2 tablespoons flour |
2 tablespoons chopped onion |
1/2 cup evaporated milk |
1/2 cup vegetable liquor |
1/2 teaspoon black pepper |
3/4 teaspoon celery salt |
3/4 teaspoon garlic salt |
salt to taste |
6 oz roll of jalapeno cheese, sliced |
1 teaspoon worcestershire sauce |
red pepper to taste |
Directions:
1. Cook Spinach; drain and reserve liquor. 2. Melt butter over low heat; add flour, stirring until smooth. 3. Add onion and cook until soft. 4. Add liquid slowly, stirring constantly. 5. Cook until smooth and thick; continue stiring. 6. Add seasonings and cheese; stir until melted. 7. Combine with spinach. 8. Serve as is or in casserole topped with buttered bread crumbs. 9. Flavor improves if refrigerated overnight. 10. This is also great as a dip. |
