From Dr. Koop. Ingredients:
10 ounces frozen spinach, thawed |
1/4 teaspoon nutmeg |
1/8 teaspoon sugar |
1 cup white cheese |
2 teaspoons flour |
2 tablespoons parmesan cheese, grated |
2 teaspoons flour |
2 tablespoons parmesan cheese, grated |
1 egg yolk |
1/8 teaspoon black pepper |
1 dash cayenne pepper |
2 egg whites |
Directions:
1. Preheat over to 200°C. 2. Drain and squeeze excess water out of spinach. 3. combine spinach, nutmeg, and sugar. 4. Place white cheese, flour, parmesan cheese, egg yolk, black pepper and cayenne pepper into a blender and mix for 30 seconds or until well-blended. 5. Add to spinach mixture and mix well. 6. Whip egg whites until they form stiff peaks. Gently fold in the spinach mixture. 7. Pour into a baking pan. Bake uncovered for 20 minutes. |
