Ingredients:
3 tablespoons water |
2 tablespoons rice vinegar |
2 teaspoons honey |
1 teaspoon prepared mustard |
1 teaspoon vegetable oil |
1/2 teaspoon lemon juice |
1/8 teaspoon onion powder |
8 fresh spinach leaves |
8 boston lettuce leaves |
2 kiwifruit, peeled and sliced |
lemon rind curls (optional) |
Directions:
1. Combine first 7 ingredients in a jar. Cover tightly, and shake vigorously. Chill. 2. Arrange spinach and lettuce evenly on 2 salad plates; top evenly with kiwifruit. Garnish with lemon rind curls, if desired. Serve with dressing mixture. |
