A flavorful combination of ingredients to dress up a spinach pilaf. Preparation and cooking times don't include time to cook rice. Ingredients:
2 lbs spinach, cooked and drained |
1 cup cooked brown rice |
1 cup grated cheddar cheese |
2 tablespoons chopped parsley |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon melted butter |
3 tablespoons catsup |
1 tablespoon prepared horseradish |
3 tablespoons wheat germ |
1 tablespoon melted butter |
nonstick cooking spray |
2 (6 ounce) cans tomato paste |
2 tablespoons wine |
1 clove garlic, crushed |
2 teaspoons brown sugar |
salt and pepper |
1/2 teaspoon basil |
1/2 teaspoon oregano |
Directions:
1. Combine spinach through horseradish. 2. Put in a casserole coated with cooking spray. 3. Combine wheat germ and butter and sprinkle over top. 4. Bake at 325° for 20 minute. 5. Mix tomato paste through oregano, warm in a saucepan and serve with spinach. |
