another delciocious spin on Spinach- from recipe email Ingredients:
1 10-oz. package chopped spinach, defrosted and undrained |
1 cup flour |
1 cup italian-seasoned breadcrumbs |
1 egg |
1/2 cup parmesan cheese, grated |
1/4 tsp. salt |
onion sauce |
1 cup chopped onion |
1 stick butter |
grated parmesan |
Directions:
1. Mix together first six ingredients in food processor, if available. 2. If not, mix with a standard or hand mixer. 3. Form into a large ball, take off about 1/4 cup and roll on a well-floured board into the shape of a pretzel log. 4. Slice diagonally in one-inch sections. 5. Place on parchment paper-lined cookie sheet. 6. Repeat until all of the spinach mixture is cut into one-inch sections. 7. Brown chopped onions in butter. 8. While onions are browning, place water in a three-quart saucepan. 9. When the water starts to boil, add gnocchi. 10. When the gnocchi float, they're done. 11. Drain well 12. Place gnocchi on a serving platter, sprinkle liberally with grated Parmesan cheese and then spoon browned onions on top. 13. Serve warm. 14. The gnocchi can be prepared ahead of time and frozen. 15. No need to defrost before placing in boiling water. 16. Make the browned onion sauce while the gnocchi is cooking. |
