Look at the labels to find the marinara sauce with the least carbohydrate. Most will be between 9 and 14 grams of carbohydrate per 1/2-cup serving, depending on the amount of sugar that is added. You can also use a tomato pasta sauce in place of the marinara. Ingredients:
2 teaspoons butter or margarine |
1/2 cup chopped onion |
1 garlic clove, minced |
1 1/2 cups egg substitute |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon ground nutmeg |
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry |
1/2 cup (2 ounces) shredded swiss cheese |
1 cup marinara sauce, warmed |
Directions:
1. Melt butter in a large nonstick skillet with sloped sides over medium-high heat. Add onion and garlic, and sauté until tender. 2. Combine egg substitute and next 4 ingredients; add onion mixture, stirring well. Pour egg mixture into pan. Cover; cook over medium-low heat 10 minutes or until mixture is set. Remove from heat; sprinkle with cheese. Cover; let stand 5 minutes or until cheese melts. Cut into 8 wedges, and serve with warm marinara sauce. 3. carbo rating: 3 |
