Spinach Filled Turkey Roll |

Ingredients:
2 beaten eggs |
2 tablespoon(s) butter |
1/3 cup(s) celery, finely chopped |
1/2 cup(s) chopped green onions |
4 slice(s) day old whole wheat bread, crumbled |
2 tablespoon(s) dried mined onions |
3/4 pound(s) fresh mushrooms, sliced |
20 ounce(s) frozen chopped spinach, drained and squeezed dry |
4 tablespoon(s) herb and garlic, onion soup mix |
1/4 teaspoon(s) pepper |
1/8 teaspoon(s) salt |
Directions:
1. Preheat oven to 350. 2. In a large skillet, saute the mushrooms, green onions, and celery in butter until tender. Stri in spninach and salt, heat through . Trmove from the heat, cool in a large bowl, combine eggs, bread, minced onion, soup mix, and pepper . Crumble turkey over mixture, mix well. 3. On a large piece of heavy duty foil, pat tureky mixture intioa 16 x 10" rectangle. Ptread spinach mixture to within 1" of edges, Roll, starting with a short side, seal seams and edges. 4. Place seam side down in a 13 x 9" baking dish coated with cooking spray. vocer and bak at 350 for 50 minutes. Uncover; bake 10 minutes louger or until a meat thermometer reads 165. Let stand for 5 minutes before cutting. |
