This is a divine quiche. Egg whites are beaten and folded in to a spicy combination of creamy ingredients. It is over the top. Ingredients:
1 tablespoon butter |
1 small onion, chopped |
1/4 cup fresh parsley, chopped |
1 teaspoon dill |
1 teaspoon basil |
10 ounces frozen chopped spinach, thawed, squeezed dry |
juice of 1/2 fresh lemon |
3 tablespoons milk |
4 ounces feta cheese, crumbled |
1-1/2 cups swiss chesse, shredded |
1/2 teaspoon ground cumin |
pinch of nutmeg |
salt and pepper to taste |
3 eggs, separated |
9-inch pie shell, unbaked (whole wheat crust is especially good) |
Directions:
1. Saute onion in butter until translucent 2. Add herbs and saute until wilted 3. In large bowl, combine onion and herb mixture with spinach, lemon juice, milk, cheeses and seasonings 4. Mix well 5. Separate eggs, stir yoks into spinach mixture 6. Beat whites until stiff peaks are formed and gently fold into spinach mixture 7. Pour into pie shell and bake at 325 degrees for 35-40 minutes or until quiche is puffed and lightly browned |
