Yummy flavor to go with a mediterranean meal or serve as an appetizer if making balls smaller. Ingredients:
2 (10 ounce) boxes frozen chopped spinach |
2 cups seasoned stuffing mix (pepperidge farms) |
2 tablespoons onion powder |
7 eggs, beaten |
1/2 cup butter, melted |
1/2 cup parmesan cheese |
1 cup feta cheese |
1 tablespoon dill |
1 tablespoon garlic |
1/4 teaspoon pepper |
1 tablespoon accent flavor enhancer |
Directions:
1. Defrost and squeeze all water from spinach. 2. Mix everything together in Kitcheniaid Mixer with beater attachment not whip (or by hand really well). 3. Roll into 1 inch balls on an greased sheet pan. 4. Bake 20-25 minutes at 350. |
