I love spinach and have many good recipes using spinach. One of my favorite spinach dishes is spinach enchiladas at our local Mexican restaurant. I try to eat there at least once a week to get my spinach fix. I could eat this everyday. However, going out to eat is expensive, soooooooooo I decided to experiment. Here it is. Ingredients:
11 ounces frozen spinach |
1 small onion |
1 garlic clove |
1/2 teaspoon pepper |
1 teaspoon olive oil |
8 ounces diced tomatoes (can) |
1 cup mild salsa |
1 cup mexican blend cheese |
4 flour tortillas (large) |
Directions:
1. place spinach, onion, garlic, pepper, oil in crock pot. 2. cook on high for 1 hour. 3. stir in tomatoes and salsa. 4. cook additional 2 hours with lid off. 5. place cooked spinach on tortilla. 6. roll tortilla and place in pyrex dish sprayed with Pam. 7. cook for 1/2 hour on 350. 8. cover with cheese. 9. cook additional 1/2 on 350. |
