Ingredients:
6 cups fat-free reduced-sodium chicken broth |
1 large egg, lightly beaten |
1 tablespoon soy sauce |
1/2 teaspoon sugar |
2 green onions, chopped |
2 cups fresh spinach |
Directions:
1. Bring broth to a boil; reduce heat to a simmer. Slowly add egg, stirring constantly, until egg forms lacy strands. Immediately remove from heat. Let stand 1 minute. Stir in soy sauce, sugar, and green onions. Place spinach in bowls; ladle soup over spinach. Serve immediately. |
