Ingredients:
6 eggs beaten
3/4 cup(s) onion chopped
1/4 cup(s) all-purpose flour
1 package(s) 10 ounce frozen chopped spinach thawed and drained
1 package(s) 16 ounce small curd cottage cheese
1 package(s) 16 ounce shredded cheddar cheese
1/2 cup(s) butter melted
salt and pepper to taste
Directions:
1. Preheat oven to 350 degrees; prepare a 9X13 baking dish with cooking spray. 2. Beat eggs in mixing bowl; stir in onion, flour until flour is not lumpy. Stir in spinach, cottage and cheddar cheese, butter, salt and pepper until evenly combined; pour evenly in baking dish. 3. Bake until bubbly and top is golden brown; about 45 minutes.
