Fantastic appetizer here. I made this for a potluck last week and everyone went nuts over them. Enjoy Ingredients:
1 dozen boiled eggs |
10 ounce package frozen spinach thawed and squeezed dry |
1/4 cup mayonnaise |
1/2 cup sour cream |
1/2 cup freshly grated parmigiano reggiano cheese |
4 drops hot pepper sauce |
4 tablespoons fine cracker meal |
curry powder |
Directions:
1. Cut eggs in half and scoop yolks out into a bowl. 2. Cover whites with plastic wrap and refrigerate until ready to stuff. Combine all ingredients together and puree until smooth. 3. Put purée in a large pastry bag fitted with a large star tip. 4. Fill each egg white by squeezing the filling from the pastry bag. 5. Garnish top with curry powder. |
