Spinach Cornbread Casserole |

Ingredients:
2 cups + 3t milk |
9 oz cornmeal; (250 grams) |
6 oz grated kasseri cheese; (175 grams) |
6 oz crumbled feta cheese; (175 grams) |
4 oz spinach; cooked and drained |
1/4 cup butter |
3 eggs |
salt and pepper; to taste |
Directions:
1. Add the cornmeal to the milk slowly in a saucepan on medium heat, stirring until the mixture is thickened. 2. When thickened, remove from the heat, add the butter and cheeses, the spinach and some salt and pepper. 3. Beat the eggs and add to mixture, combining well. 4. Pour mixture into a greased and floured oven pan and bake at 180°C for about an hour. 5. Contributor: Manna brand cornmeal package (Greek) |
