From a friend back at college. Very versatile, can add ingredients as you like. Ingredients:
4 cups water |
1 t salt |
1 cup ground yellow cornmeal |
1/2 cup milk |
1 bunch spinach |
1 - 1 1/2 cup grated parmesan (or your favorite cheese) |
1 1/5 t pepper |
Directions:
1. Preheat oven to 400 2. Rinse spinach, chop coarsely 3. Boil water 4. Pour boiled water over cornmeal 5. Pour into small, glass baking pan 6. Stir in spinach & cheese 7. Bake for 30 minutes 8. Can be eaten fresh from oven, served at room temperature or chilled |
