This is a great side dish for dinner and also a nice brunch dish Ingredients:
1 tb butter,melted |
cooking spray |
2 (6oz) pkgs. fresh baby spinach |
1-1/4 c (5oz) shredded reduced-fat cheddar cheese |
3/4 c (3oz) shredded monterey jack cheese |
6 oz flour (1-3/4c) |
1-1/2 c fat free milk |
1 c egg substitute |
1 tsp salt |
1 tsp baking powder |
2 tsp dijon mustard |
1/4 tsp fresh ground black pepper |
1/8 tsp ground nutmeg |
1/8 tsp cayenne pepper |
crushed red pepper (optional) |
Directions:
1. Preheat oven to 350' 2. Pour butter into bottom of a 9x13 baking dish coated with spray;tilt dish to coat. Place spinach evenly in bottom of dish;sprinkle evenly with cheeses. 3. Lightly spoon flour into dry measuring cup; level with knife. 4. Combine flour and next 8 ingredients (thru cayenne) in med. bowl;stir with whisk until blended. Pour milk mixture over chees. 5. Bake 40 mins or till lightly browned. Sprinkle with crushed red pepper,if desired. |
