cooking spray |
1 tablespoon butter, melted |
2 (6 ounce) bags fresh baby spinach |
1 cup shredded cheddar cheese |
1 cup shredded monterey jack cheese |
1 1/3 cups flour |
1 1/2 cups low-fat milk |
1 cup egg substitute |
1 teaspoon baking powder |
salt and pepper, to taste |
2 teaspoons dijon mustard |
1 pinch fresh ground nutmeg |
1 pinch cayenne pepper |
Directions:
1. preheat oven to 350. 2. spray a 13x9 pan with spray and add melted butter to coat. 3. place spinach in bottom of dish, sprinkle with cheeses. 4. combine remaining ingredients in a bowl and mix well. 5. pour into pan and bake for 40 minutes until lightly browned. |
