A nice little entree I like to serve with just some buttered toast. A nice late night dinner & very easy to put together. From Elaine Anderson of Aliquippa,PA. Ingredients:
1 tablespoon dry breadcrumbs |
3/4 cup shredded cheddar cheese (divided) |
1 (10 ounce) package frozen chopped spinach, thawed & squeezed dry |
1/4 cup finely chopped red bell pepper |
1 1/2 cups egg substitute |
3/4 cup milk |
2 tablespoons grated parmesan cheese |
1/2 teaspoon dried onion flakes |
1/2 teaspoon salt |
1/4 teaspoon garlic powder |
1/4 teaspoon pepper |
Directions:
1. Sprinkle bread crumbs evenly into a 8 inches sq. baking dish coated with nonstick cooking spray. Top with 1/2°C cheese,spinach & bell pepper. In a small bowl combine the remaining ingredients; pour over top. 2. Bake uncovered at 350 deg. for 35 minutes Sprinkle with remaining cheese. Bake 2-3 minutes longer till cheese melts or untill a knife inserted near the center comes out clean. Let stand for 15 minutes before cutting. |
