Spinach-Cheddar-Bacon Quiche |

A quiche that uses less eggs than most quiche recipes. Ingredients:
10 ounces frozen chopped spinach, cooked and drained |
2 cups shredded cheddar cheese |
2 tablespoons flour |
1 cup milk |
2 eggs, beaten |
3 crisply cooked bacon, crumbled |
1/2 teaspoon salt |
1 dash pepper |
9 inches unbaked pastry shells |
Directions:
1. Drain spinach well, removing as much excess water as possible. Toss cheese with flour. Add spinach, milk, eggs, bacon and seasonings; mix well. Pour into pastry shell. Bake at 350 for 1 hour. Garish with additional bacon, if desired. |
