Spinach Celery Salad With Blueberries & Yogurt Dressing |

I got a little creative with what I had to use up in the fridge. End result? Yummy and surprisingly healthy. Ingredients:
2 cups fresh spinach (nice green and leafy) |
6 celery ribs, chopped into bits |
1/2 cup radicchio |
1/2 cup blueberries |
1/2 cup shelled walnuts |
1 cup plain yogurt |
1/4 cup lemon juice |
1 teaspoon dried dill |
1 teaspoon coriander |
1/2 teaspoon sugar |
1 dash cinnamon |
1 dash allspice |
water, for diluting |
Directions:
1. Put all the salad ingredients in a large bowl and toss. 2. Make the dressing: due to the natural separation in the yogurt, sometimes you'll get plenty of liquid in the cup and other times you won't. Add the lemon juice to the yogurt and mix thoroughly. If it's still very thick, dilute with a little bit of water, 1 tbsp at a time, until thinner. Then add the spices. 3. Put the desired amount of dressing on your salad (or use another kind if you like) and serve. |
