From Betty, Aunt Phyllis' SIL in a computer recipe swap, with love! Only 6 ingredients and simple preparation. Great as a side dish or as an hors d'oeuvre with crackers. Ingredients:
3 eggs |
1/2 pint sour cream |
1 (6 ounce) can french-fried onions |
10 ounces frozen chopped spinach, thawed, drained |
4 ounces cheddar cheese, shredded |
1 (4 ounce) can mushrooms, stems and pieces, drained |
Directions:
1. Mix all ingredients together well. 2. Place in a 2 quart rectangular casserole dish and bake in a 350 degree oven for 50 minutes. |
