Spinach, Broccoli, and Carrot Quiche |

A vegetarian quiche. Ingredients:
1 teaspoons vegetable oil |
1/2 onion, diced |
1 clove garlic, minced |
10 ounce frozen chopped spinach, thawed |
1/4 cup shredded carrots |
2 cups chopped fresh broccoli |
1/2 cup shredded monterey jack cheese |
4 oz shredded cheddar cheese |
1 cup egg beaters |
1/4 teaspoon crushed red pepper flakes |
1/8 teaspoon ground nutmeg |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 pie crust |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Heat the oil in a skillet over medium heat, and cook the onion until tender. Mix in the garlic, spinach, broccoli, and carrots, and cook until the spinach liquid has evaporated. Remove skillet from heat, and mix in cheese and egg substitute. Season with red pepper, nutmeg, salt, and pepper. Pour the mixture into the pie crust. Bake 30 minutes in the preheated oven, until a toothpick inserted in the center of a quiche comes out clean. |
