This is an old stand by that has been around forever but everyone loves it, that is why I am posting it. It freezes well. Pop it in the oven and warm them up. My daughter craves this. This is the only known thing she has cooked. Read more . She loves this. I love to see my family eat and have favorites. I loved this growing up and both her great grandmothers loved this.
Ingredients:
2 10 oz pkg chopped spinach; cooked and drained
2 -3 cups peppridge farm herb stuffing (not cubed)
2 onions; chopped fine (can use 1)
6 eggs; beaten
3/4 cup melted butter
1/2 cup parmesan cheese
1 teaspoon garlic
1/2 teaspoon thyme
1/4 teaspoon pepper
1 teaspoon accent, optional
Directions:
1. Mix all together. Refrigerate until well chilled. Roll into a small ball and cook on greased cookie sheet in 350 degree oven for 20 minutes. This can be frozen before or after cooking. Serve hot.
2. Recipe says to thaw for 1 hour before baking if frozen.
3. Recipe also says freeze 1 hour on cookie sheet before baking. I have never done this.
