Recipe handed down from 3 generations of authentic Italians. Great when hosting a party, or to take to a pot luck. Ingredients:
1/4 c. butter, melted |
1 box frozen chopped spinach |
1 c. seasoned bread crumbs |
1 small onion, minced |
1/2 c. parmesan cheese |
salt to taste |
black pepper to taste |
3 eggs, beaten |
Directions:
1. Defrost the frozen spinach and drain well 2. Preheat oven to 350 degrees 3. In a large bowl, combine all ingredients and mix thoroughly 4. Form the spinach into ping-pong sized balls and place on a greased baking sheet 5. Bake for 8-10 minutes or until the tops start to brown 6. ***NOTE 7. Depending on how big you form the balls, this will yield around 12-15 8. You can prepare your balls and freeze, just increase the cooking time to 20 minutes at 350 9. I find that using my hands is the easiest way to make sure the ingredients get thoroughly mixed. 10. When forming the balls, keep your hands slightly wet with tap water. This helps keep the mixture from sticking too much 11. You can easily multiply this recipe to make as many servings as desired |
