Another of mom's old school party recipes. I love this one too. You can make the balls ahead of time and freeze them and then just bake them before you need them. Great YUM factor Ingredients:
2 (10 ounce) boxes frozen chopped spinach |
2 cups herb stuffing mix |
1 large onion, chopped fine |
4 eggs, beaten |
1/2 cup melted butter |
1/2 cup parmesan cheese |
1/2 teaspoon garlic |
1/4 teaspoon pepper |
Directions:
1. Cook and squeeze all water out of the spinach. Mix everything together and chill. Roll into 1 inch balls on a sheet pan. 2. Bake 20 minutes at 350. |
