Spinach Baked With Three Cheeses |

Easy dish. Be sure to drain the spinach as well as you are able after sauteing. The breadcrumbs don't absorb as much as you'd think. You can change up the cheeses as you prefer. Ingredients:
3 tablespoons olive oil |
2 - 10 ounce bags baby spinach, coarsely chopped |
1 cup finely chopped onion |
1/2 cup crumbled feta cheese |
1/2 cup grated edam cheese |
1/4 cup crumbled roquefort cheese |
2 tablespoons fresh dill (or more!) |
2 tablespoons fresh breadcrumbs |
1 large egg yolk |
Directions:
1. Preheat oven to 350 degrees F. 2. Lightly butter an 11x7x2 baking dish. 3. Mix onion, cheeses, dill, breadcrumbs and egg yolk in large bowl. 4. Heat oil in large pot over medium-high heat. 5. Add spinach. 6. Saute until wilted and juices evaporate, about 3 minutes. 7. Transfer spinach to a strainer and drain well. 8. Arrange spinach over bottom of prepared dish. 9. Sprinkle with cheese mixture. 10. Bake for 20 minutes or until heated through. 11. Preheat broiler. 12. Broil spinach and cheese until cheese is golden on top, watching closely. |
