This is an incredible recipe. Another one I obtained from an estate sale. I tried it and loved it. It is now a mainstay in my home as well as a pot luck favorite. Ingredients:
2 packages frozen chopped spinach |
3 cups cooked rice |
4 eggs beaten |
1 can condensed cream of mushroom soup |
1 teaspoon onion powder |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup grated parmesan cheese |
Directions:
1. Thaw drain and separate spinach. 2. Toss with rice. 3. Combine eggs, soup and seasonings. 4. Stir into spinach mixture. 5. Turn into greased 1-1/2 quart casserole. 6. Sprinkle top with Parmesan cheese. 7. Bake for 30 minutes at 350. 8. Serve immediately. |
