Spinach Artichoke Pasta Salad |

This is a fabulous, fresh pasta salad dish, bursting with flavor! It's great for parties/showers/pot luck. Inspired by Rachael Ray, many years ago! Ingredients:
kosher salt |
1 pkg cheese tortellini |
1/2 lb fresh baby spinach |
1 can baby artichoke hearts in water, drained and chopped |
1 roasted red pepper, drained and chopped |
1/2 small red onion, chopped |
1 garlic clove |
1 lemon, zested |
2 tsp fresh lemon juice |
2 tbs red wine vinegar |
1/2 cup evoo |
1 tbs fresh thyme leaves, chopped (or 1/2 tsp dried) |
pepper |
handful sundried tomatoes, packed in oil, chopped |
Directions:
1. Bring pot of water to boil and add pasta 2. Cook 3-4 minutes 3. Drain and cool pasta 4. Chop spinach 5. Combine with artichoke pieces, roasted red pepper and onion 6. Chop garlic, add salt to it and make into a paste with the back of your spoon or a flat knife 7. Transfer garlic paste to small bowl and add lemon zest, lemon juice and vinegar 8. Whisk in oil, thyme and pepper 9. Add pasta and sun-dried tomatoes 10. Dress salad and gently toss 11. Serve or refrigerate! 12. **you could add cubed or shredded rotisserie chicken and make it a meal! Fabulous!! |
