Spinach Artichoke Dip With Mango

A tasty dip,r spread for crackers so easy with bright colors and rich flavors.
Ingredients:
one 8 oz. package of organic cream cheese
two large globe artichokes leaves removed
three ounces of baby spinach
one ripe mango peeled and diced
two tablespoons lemon juice divided
a pinch of salt to taste
Directions:
1. Boil artichokes in water with tablespoon of lemon juice.
2. In the mean time, in a food processor, add spinach and tablespoon of lemon juice and pinch of salt, diced mango and pulse to combine.
3. Remove artichoke from boiling water and dice; add to processor with cream cheese and pulse to combine.
4. Serve with pita chips or crusty bread.
