I love this recipe...over the last few months I've made it with different variations (ie: canned spinach vs frozen spinach; same amount, just less time to thaw!) and I absolutely love it, as does my family (including my 1 1/2 year old daughter who would eat it for dinner if I let her). Ingredients:
2 (10 ounce) packages frozen spinach, thawed and drained (or 1 23oz can) |
1 (8 -10 ounce) jar marinated artichoke hearts (drained and rinsed) |
1 cup mayonnaise |
1 cup sour cream |
1 (1 ounce) package of powdered ranch dressing |
6 -7 scallions (chopped) |
Directions:
1. if using frozen spinach, place in microwave to thaw. 2. in small food processor combine: scallions, drained/rinsed/drained artichoke hearts. 3. in seperate bowl combine: mayonnaise, sour cream, powdered dressing and food processor mixture. 4. mix in spinach and stir well to avoid clumps. 5. place in oven safe dish and bake on 375* until warmed throughout. |
