A spinach recipe for those who think they don't like spinach. This is a creamy, warm delicious version of the green stuff, it reminds me a bit of the TGIF hot artichoke dip. Even kids like this!! The cream cheese makes it so yummy. Ingredients:
2 10-oz. pkgs. frozen chopped spinach, thawed |
2 6-oz. jars marinated artichoke hearts, drained |
salt and black pepper to taste |
1 8-oz. pkg. cream cheese, at room temperature |
6 tablespoons milk |
2 tablespoons mayonnaise |
1/3 cup parmesan cheese |
Directions:
1. Preheat oven to 350 degrees. 2. in a colander, drain spinach, squeezing as much excess water from it as possible. Transfer spinach to a 2-quart casserole dish. Add artichokes and salt and pepper. 3. In a mixing bowl, combine cream cheese, milk, and mayonnaise. Pour over spinach mixture. Mix together gently and sprinkle with cheese. 4. Bake, uncovered, until top is lightly browned (35-40 minutes). Serve hot. |
