I love this recipe. Good all year long. Enjoy Ingredients:
20 ounces frozen chopped spinach |
1/4 cup butter |
1/2 cup finely chopped white onion |
1 small clove garlic minced |
14-1/2 ounce can artichoke hearts drained and cut into quarters |
16 ounces sour cream |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
1/2 cup parmesan cheese divided |
Directions:
1. Cook spinach according to package directions. 2. Drain well pressing out as much water as possible then set aside. 3. In a large skillet melt butter and sauté onions until tender then add garlic and cook until fragrant. 4. Add spinach, artichoke hearts, sour cream, salt and pepper. 5. Gently fold to combine and stir in 1/4 cup parmesan cheese. 6. Spoon into lightly greased rectangular baking dish and sprinkle with remaining parmesan. 7. Bake at 350 for 30 minutes. |
