This recipe came from a local grocer. Ingredients:
2 tablespoons water |
1 1/2 tablespoons red wine vinegar |
1 tablespoon olive oil |
1 tablespoon honey |
2 teaspoons dijon mustard |
1/4 teaspoon fresh ground black pepper |
1 apple, thinly sliced lengthwise (gala or granny smith) |
1 (10 ounce) bag baby spinach |
1 red onion, thinly sliced |
1/4 lb button mushroom, sliced |
2 slices bacon, cooked and crumbled (optional) |
Directions:
1. Combine first 6 ingredients (water through pepper) in a small bowl; whisk together. 2. Place the apple slices in a large bowl. Spoon 1 tbsp dressing over apples, toss to coat. Add spinach, onions, mushrooms, and remaining dressing; toss to coat. 3. Sprinkle the bacon over the top of salad. |
