SPINACH AND TOMATO SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lynch Estate in Garland, Texas in 1994. Ingredients:
1 white onion chopped |
2 teaspoons garlic minced |
2 tablespoons olive oil |
4 cups chicken stock |
1/2 cup orzo |
3 tomatoes diced |
1 pound fresh spinach chopped |
1 tablespoon fresh basil minced |
1 teaspoon freshly ground black pepper |
3 tablespoons grated parmesan cheese |
Directions:
1. In pot heat oil and sauté onion and garlic until fragrant and translucent. 2. Add stock and bring to a boil then reduce heat and add orzo then simmer 10 minutes. 3. Stir in spinach and tomatoes then simmer 5 minutes and stir in basil and pepper. 4. Ladle into soup bowls and sprinkle with parmesan. |
